
Rub lamb with olive oil. Combine and mix bread crumbs, parsley, butter lemon peel, garlic, oregano, salt, basil, rosemary, thyme, sage and pepper. Stuff inside and skewer roast shut. Rub outside of roast with salt, pepper and spices. Place roast on rack in shallow pan breast side up. Roast uncovered at 325 degrees until done.
