Tummy Tortellini

A simple, but elegant dish. Tortellini (and Tortelloni, either can be used) is a stuffed pasta often called "The Belly-Buttons of Venus" as their shape is reminiscent of the exquisitly lovely feminine navel. The centerpiece of this dish is not the tortellini itself, but rather the real thing: the lovely feminine navel!

The cooking of the tummy itself is a matter of individual taste. It can be cooked in the pot along with the tortellini or separately baked or grilled with the pasta to be added later. Of course, it is perfectly acceptible to serve the tummy raw, with the tortellini as a garnish. This is highly recommended as a truly unique dining experience.

Selection of the tummy is a matter of personal choice. If you are unsure, consult a professional. Make sure you examine the full tummy and not just the navel itself. Taste testing prior to selection is a good idea. The tummy should have a delicate and sweet flavor, with slight hints of salt and musk. An "innie" belly-button is preferred for this dish unless you are really into "outies." If such is the case, hey... knock yourself out!

Prepare the tortellini by bringing a pot of water to a boil. Add a little salt, olive oil and lemon juice to the water. When boiling, add the tortellini pasta and allow to boil until soft (at least fifteen minutes). When cooked, drain the pasta in a strainer or collander.

The pasta sauce should be cooked in a separate pot. Be careful not to scorch or burn the sauce. Remove it from the heat before it comes to a boil.

Coat the bottom of a large platter with a layer of sauce. Add the cooked tortellini to the remaining sauce and lay your tummy onto the platter on top of the sauce. Cover the tummy with the tortellini and sauce and sprinkle generously with cheese. A few herbs, such as Tarragon or Basil, add a nice touch. Garnish with fresh parsley.

Serve with garlic bread and a nice antipasto salad. A good red wine, such as a Zinfandel or Chianti, is recommended. Don't stand on ceremony and just dig in! Knife and Fork are not required.
